2021 - Organic. The Viognier cuvée is handled in a manner similar to that of the Sauvignon Blanc: early morning harvest to take advantage of the cool morning hours, fermentation and élevage in tank, contact with the fine lees and some batonnage; bottling takes place during the spring season following harvest. Drives a bright, crisp nose of exotic fruits, honeysuckle, pear with well defined mineral notes. Crisp, vibrant and electric on the palate that has lifted tree fruits and crisp finish. A versatile wine for pairing with complex salads, salty cheeses, clams casino, Pacific oysters or citrusy pan seared white fish.
