
2017 - All organic and biodynamically produced in the AOP of Ventoux. Anais Vallot produces this wine entirely in concrete to show of the unique qualities of their fruit. This is a field blend of Rhone varieties, co-fermented with natural yeasts. The wines aromas are classically Rhone w/ notes of black cherry, bramble berry, raspberry, earthy mushroom and garrigue. Vibrant, fresh, tense palate of fruit with a mingling of white peppery spice. Pair with cassoulet, Coc Au Vin or fall game.--Finn
