The 2018 Lievland Cabernet Sauvignon is made all the more unique because they blend in small quantities of Shiraz and Cinsault. The Cinsault is used to increase the aromatics in the wine while the Shiraz adds more intense black pepper notes. Once poured, the wine shows off an inky purple/blue visceral color that stains the glass. Dark plummy, blackberry, blueberry, cassis notes are lifted with nuances of chocolate and spice. You can really sink your teeth into this wine with its abundance of blueberry and plums fruits, followed by well developed tannins and a spicy finish. This wine makes for a good conversation starter and is built to handle a rich mole sauce, barbecue short ribs, melt in your mouth seared pork belly or steak w/ a chimichurri sauce.
